Here is and easy way to prep a protein and nutrient-packed breakfast, lunch or dinner!
- 2 eggs
- 4 tablespoons Lyoca freeze-dried vegetable mix
- left over rotisserie chicken or ham (optional)
- 2 tablespoons grated cheese (option)
- salt an pepper to taste
- 1 tablespoon vegetable oil
Crack two eggs in a bowl and beat with a fork. In a pan, pour the vegetable oil and warm until it covers the pan. Pour egg mixture into the hot pan. Add the rest of the ingredients. Let cook 1-2 minutes until you are able to flip the omelette onto itself, creating a half moon or just stir for scrambled eggs! Cook until desired doneness. Enjoy!
